E&amp;#39; stata una festa quando sulla tavola domenica scorsa comparvero i piatti , ancora &amp;quot;fumanti&amp;quot;. Io però dalla ricetta  ho escluso i piselli perchè non piacciono hai bambini. Come tu hai scritto, ogni famiglia ha adottato una sfumatura al piatto. Nonostante io abbia adottato questa piccola variante è stato un piatto davvero apprezzato da grandi e piccini. sereno."sourtout" sopratutto,e la storpiatura in napoletano ,o'sartù!piatto nobile,nobilissimo,tanto che era preparato dai "monzù",i monsieur francesi,cuochi a napoli.ogni famiglia ha la sua ricetta,ogni ricetta ha la sua splendida dignità,anche perchè la cucina è rielaborazione,ricordi.anche io sono per la semplificazione,la destrutturazione per essere precisi delle ricette,anche perchè il classico sartù esigeva tempi di preparazione lunghissimi.andando coi ricordi la ricetta recita pressapoco così:10 rotoli(c.a 900 gr)de riso janco de salierno,ddoje caraffe d'once(c.a 1,5 l)de rraù bbuono cu e tracchie,gallenella e cunzevera,casocavallo di barracca a cantaro,casoricotta,nzogna e merullo,purpettelle fritte.il riso andava bollito per 3 minuti contenuto in un panno di lino per evitare la perdita di amidi,e veniva composto molto alto.sugna e midollo servivano a "tenere"la composizione,ruolo svolto oggi dall'uovo.non esiste nessuna traccia che ricordi la presenza di ritagli di pollo e verdure varie.&lt;BR/&gt;è bello vedere l'evoluzione di questo principe della cucina napoletana.ne esiste anche una condita con la genovese.&lt;BR/&gt;se fa piacere posso intervenire di molto più complesso, ha più ingredienti (strutto, fegatini di pollo, uova sode, funghi, ecc...) poi il riso viene cotto nel ragù e poi sistemato in uno stampo a forma di ciambellone, con il riso si Per quanto riguarda il riso generalmente utilizzo l'arborio oppure il S. Andrea, sono gli stessi che adopero anche per i risotti, non sò se sono quelli giusti ma sono quelli che a me piacciono di più.&lt;BR/&gt;&lt;BR/&gt;&lt;B&gt;Acilia&lt;/B&gt; dò il benvenuta anche a te sul mio blog; la Puglia è una terra che adoro, sia per i paesaggi che per il tipo di cucina e anche perchè probabilmente dato il mio cognome (Otranto) forse qualche mio avo era pugliese. Ti invidio molto, purtroppo ho solo dei vaghi ricordi della cucina della nonna, quando era con noi io non mi ero ancora avvicinata alla cucina!
